NATURE OF THE GROUND Eocene origin, ponca, clayey silt.
VINIFICATION When fully ripe, the grapes are harvested during the coolest hours of the morning and are de-stemmed and softly pressed in the cellar. The must obtained undergoes a first clarification. Once the fermentation phase is over, the new wine obtained is in the same fermentation containers, with weekly battonage on noble lees. At the end of this maturation phase the wine is clarified again, filtered and bottled. Aged in the bottle before being released.
SENSORY NOTES Good acidity and great freshness are the main characteristics of this wine. Very fine on the nose, it recalls white flowers and apple
PAIRING Excellent with all types of fish but also as an aperitif.
