This 100% Cabernet Sauvignon is full body with elegant tannin and long persistence. Beautiful ruby red colour, pungent at the nose, with spices like pink pepper and cardamom, eucalyptus, and chocolate.
Background
The noble wine of the La Dama del Lago winery is the gem of the vineyard. Made of 100% of Cabernet Sauvignon planted on Volcanic soil at the lakefront of the Rentica Estate at 350 meters above sea level and exposure on the South-South West. The wine is processed in a cellar outside the estate, fermented in steel vats and aged in French oak barrels of first passage for 12 months; it follows a bottling with a rest of about 6 months. Specifications: Grapes: Cabernet Sauvignon 100%. Production area: Bolsena. Soil type: volcanic with skeleton presence. Harvest: manual. Average age of plants: 20 years. Grape yield per stock: 1200g. Vinification: the grapes, handpicked, are wine-made in a stainless steel tanks at temperature-controlled. Then dried and decant into french oak’s barriques for 12 months. Further 6 months in the bottle.
