Amarone is the noble wine of Verona. The clusters dedicated to the production of Amarone must be completely undamaged, with grapes not too crowded, so as to allow the passage of air during the delicate process of drying that takes place on special racks, which are constantly monitored. During this period the grapes – Corvina, Corvinone, Rondinella and Oseleta – dehydrate, thus increasing their sugar content and gaining flavour. After the crushing and the fermentation, the ageing process continues in oak barrels for at least three years.
