Harvested late September to early October, the Sangiovese grapes are delicately selected berry by berry. The individual berries are dropped into the fermentation tank by gravity where the must will ferment for circa three weeks until the wine is completely fermented. The must is pumped over throughout the maceration to allow for the optimal extraction from the delicate grape skins. The new wine is moved to another tank to complete the secondary malolactic fermentation while the skins are gently pressed. Once the secondary fermentation is complete, the wine is then moved into large oak wine casks for aging. The Chianti Classico will stay in the casks for 18 months to ensure that the delicate fruit notes are not overpowered by the oak tannins. The goal is to create a wine that reflects Capaccia’s terroir and has the structure to be cellared long after its release.

Since purchasing the property in 2010, Herman De Bode has assembled a production team to bring to life his vision of creating one of the best wines in Italy. After replanting the vineyards, Herman built a state-of-the-art underground winery and began the restoration of the Medieval hamlet of Capaccia.

Blessed with an incredible geographic location that is ideal for grape growing, Podere Capaccia is dedicated to creating the highest quality wine with its exceptional grapes. The sandstone, limestone and shale composition of the vineyards allow for exceptional water drainage and deep root growth. At 550 meters above sea level, the air temperatures cool at night even during the hottest period of the summer creating elegant grape maturation. With the southern exposure, the vines receive all the necessary sunlight to achieve the perfect ripeness.

The underground barrel room maintains a constant temperature and humidity to allow for a delicate barrel aging. The wines are carefully bottled and allowed to rest in a temperature and humidity controlled storage room until they are ready to be released.

Bouquet: Powerful dark cherry aroma with hints of floral.

Palate: Clean acidity with balanced tannins that complete the palate.
