Soil: medium blending with presence of sand, clay rich of magnesium and calcium. Varieties: Harvest: End September for Merlot, beginning October for Sangiovese, second week of October for Cabernet Sauvignon. Yield of grapes per hectare: 50 quintals. Vinification: Fermentation in stainless steel. Maceration: 2 days at 10°C - 4/6 days at 28°C/30°C. Malolactic: in barriques (new and used). Aged: 15-18 months in barriques. Refinement in bottles: 6 months. Pairing: roasted and grilled meats.
