Our Reserve, only produced in the best years, bears a name of Latin derivation referring to Roman antiquity when the interest of the Empire in the fineness of the grapes from Bubbio had already been noted. It represents the maximum expression of quality that can be obtained with our grapes: it is a very structured wine, with fine, smooth tannin, enveloping and elegant.

Good structure and persistence predict a fascinating evolution of the wine. Brilliant ruby red tending to garnet reflections upon ageing. Hints of enticing mature small wild red berry fruits like cherry, bitter cherry, oral notes of rose hips and spices upon opening like vanilla and intense liquorice. 

Serving temperature: 16 - 18 °C.

 

Background

Alcoholic fermentation in stainless steel tank and malolactic fermentation in oak. Maturation 15-18 months in barrels, tonneaux or large casks, then in the bottle for at least 6 months
