Blanc de Blanc 2014: This wine, with great balance and excellent persistence, is only produced from Chardonnay grapes originating in vineyards cultivated in the high hills. Selected on the vine, harvested by hand in small crates, they undergo very soft pressing. The second fermentation takes place in the bottle according to the Classic Method for around 40-50 days in the well-ventilated cellars of Cascina Pastori and then left on the lees for at least 36 months. Traditional remuage on pupitres and disgorgement by freezing. A suitable period of ageing in the bottle follows.

Rubino 2017 ( Organic ): Rubino is a blend of Sangiovese, Merlot, Cabernet. Flavour: Smooth, light tannin structure with a lingering aftertaste; Pairings: A perfect companion for first courses, boiled dishes, white meats and cheeses. James Suckling 90 points

Spiridione 2017 ( Organic ): is a Merlot 100%. An elegant wine of great structure and with a pleasant tannic developing. 18 months in french oak. Food Pairings: It achieves its best expression when served with red meats, particularly game, and with dishes dressed with truffle. 

Barolo 2011: It is known to be “the King of Wines, the Wine of the Kings”, loved by sovereigns and nobles since the Middle Ages; it is recognised among the most famous and renowned red wines in the world. Its production is subject to a very restrictive production’s technical policy. It is obtained exclusively from Nebbiolo grapes, in 11 Langhe’s municipalities affected by fog, which forms along the Tanaro river’s banks and expands on the hills, wrapping the vineyards throughout all the harvest period. 18 months in french oak. Great match for roasts, red meats, game, hard and spicy cheese, Barolo is also a perfect wine for meditation. BOTTLES PRODUCED: 968 

Amarone 2015: Known worldwide, Amarone is the noble wine of Verona. The clusters dedicated to the production of Amarone must be completely undamaged, with grapes not too crowded, so as to allow the passage of air during the delicate process of drying that takes place on special racks, which are constantly monitored. During this period the grapes – Corvina, Corvinone, Rondinella and Oseleta –  dehydrate, thus increasing their sugar content and gaining flavour. After the crushing and the fermentation, the ageing process continues in oak barrels for at least three years. Amarone has a deep red colour, round and velvety taste, aromas of ripe fruit, almond, liquorice, tobacco and coffee. Moreover, it is a perfect match for wild game meat or roasts, but also as a meditation wine. It is advisable to uncork the bottle at least one hour before use. BOTTLES PRODUCED: 576

Alta Langa Rose 2013, Champenois Method: Intense, decisive, profound and with great elegance, this Classic Method releases mineral hints and envelopes the typical notes of Pinot Nero: raspberries, red currants, red spring flowers.
